Some markdown parsers allow you to take a look at the AST.
I used it to replace a code section containing dot code with a png.
or using comments like <!--more--> to generate site Teasers.

You can use pandoc to convert markdown in almost every format you like.

If you have access to the AST, you can integrate as much metadata as you like.

Currently I add my thoughts manually. I'm still trying to find out if it has a significant advantage over classic note taking methods.

Some kind of image or json?
Every participant should agree to this. I am just thinking about, what you can do with the exported data.
I can imagine, that before starting a retro, you take a look at the previous one. An image should do the thing.
Json would be fine, if you want to put the retro data into an other shape.
