Tailscale, or any encrypted mesh overlay is perfect for this. Infact I prefer it that way. Rustdesk can do what it does best at its core.

The difference here is that the devs specifically chose to stop allowing the app to work on the OS without any known compatibility issue? The app just works fine on Android should they let it run.

Take a look at singleFile - a project that lets you save the entire webpage. It has an integration for saving the hash if the page on a Blockchain. You can choose to set it up between parties who're interested in the provenance of the authenticity.
