Everyone's been trying to sell shovels and build a platform. Most of the diggers have been Big Tech companies with existing platforms slapping on tools/chat-bots/autocompletes.
What's the most interesting usage you've seen?
Mine is using it to auto-transcribe doctor visits with patients to automate generating patient notes. When it works, it saves doctors a lot of paperwork.
